At the lighter end of the roast spectrum, we accentuate the unique fruity and floral notes within the beans. As the roast length increases, the natural sugars in the coffee beans caramelize and darken to elicit a richer body. Our darkest roasts fully express the beans’ natural oils, yielding subtle smokiness and flavors akin to dark chocolate. Pretty good, but not my favorite of their dark roasts

"Midnight Sun has a funny sort of metallic aftertaste…kind of like spicy, but not really…some property in the oil maybe that comes out in the roasting process? It’s hard to describe. I like the Peruvian dark roast much better- it’s more mellow- I just thought I’d try something else. I wish they hadn’t ever changed the Organic Biorevolution recipe to a lighter roast. The old recipe was the greatest coffee I’ve ever had and can’t find an equivalent in any of their other dark roasts. I emailed to inquire which one might be the closest to that old recipe and never got a response back. (Well, they responded initially, but it seems they didn’t understand my question, and when I emailed back to clarify I never heard back. ) I’ll keep trying their other dark roasts to see if I like something else better. For now this will do. It’s better than anything else I can find where I live, that’s for sure. These people make GOOD coffee."

Where is Midnight Sun coffee from?
This a coffee blend, so it's origins are not fixed and usually include beans from more then one country.
LOVE THIS coffee! Taste is great! Can I ask what the caffeine content is? Darker roast so less? I have felt a bit of jitters when drinking it. Maybe I'm making it to strong or letting it brew to long? Not sure what matters. I REALLY enjoy it. Trying to figure out if I'm sensitive to something specific so exploring the caffeine levels as a start. Thank you for the great coffee!
