The coffee yields a layered and expressive cup featuring sweet notes of molasses and fig accented by the lively brightness of lime and green grape. Our Co-op Origins Series showcases unique coffees from inspiring co-ops, using lighter roasts to allow subtle sweetness and nuanced flavors to shine. Empowering Ixil Farmers

The Indigenous Maya Ixil farmers who cultivate this coffee are members of the Asociación Chajulense Va’l Vaq Quyol, a farmer group founded in 1990 in San Gaspar Chajul, which today brings together nearly 1,000 smallholder coffee farmers across dozens of communities. By sharing technical knowledge and investing in infrastructure, members are able to reach international markets with their organic coffee and maintain control over their livelihoods. On these small plots of land surrounded by forests, coffee trees are cultivated alongside other crops and native vegetation, creating biodiverse farming systems that help protect soils and sustain long-term productivity. Coffee farming is deeply rooted in family and community life, and the association invests in the resilience of its members by facilitating the planting of new coffee seedlings, teaching better farming practices, and creating new opportunities for women and youth to lead Chajul’s future.

At our Massachusetts HQ, our team batch-roasts coffee daily under a 1,418 panel solar array, bringing out the best flavors of each harvest. At the lighter end of the roast spectrum, we accentuate the unique fruity and floral notes within the beans. As the roast length increases, the natural sugars in the coffee beans caramelize and darken to elicit a richer body. Our darkest roasts fully express the beans’ natural oils, yielding subtle smokiness and flavors akin to dark chocolate. At every level, our expert team creates a smooth, clean, and balanced cup with reliable consistency from batch to batch.
