I think that there are a lot of people that are primarily looking for a low sugar bar.. Many of them are concerned about the sugar substitutes and do not feel well after eating the sugar substitutes.. I think that there are very few that are actually opposed to sunflower lecithin , Inulin or coconut milk powder. You need to check this out and do some research on what they are wanting to avoid.

Hi William, our Total Eclipse chocolate bar contains a modest amount of organic raw cane sugar for sweetness to balance the high cacao content of this bar. It sounds like you are concerned about sugar substitutes and other additives, and we do not have any of the ingredients you mentioned in our bars, with the exception of the Coconut Milk Chocolate bar which does have coconut palm sugar. Many of our bars also feature sucanat, which is a whole cane sugar, less refined, that maintains more of the minerals and fiber from the sugar cane plant. Thank you for your comment.

I like the low sugar in this bar but it is hard to chew. Since I am buying it because of the low amount of sugar as many other people are I am wondering if you can add some more lecithin or a little more coco butter so it is not so hard and brittle ? Maybe you could come out with a new bar called low sugar that has 70 % cocoa but is as low in sugar as this 92% bar.

Hi William, thanks for taking the time to ask about the Total Eclipse bar recipe. We do not use any soy lecithin in any of our chocolates and don't have any plans to. I have three questions: - What is the ratio of Cocoa liquor to cocoa butter in this product? - What is the flavanol content per serving? - Lead/Cadmium/Heavy metal content?

Hi Deepika, Our exact recipe ratio is proprietary, but we can tell you that the additional organic cocoa butter ingredient in our Organic 92% Total Eclipse is in the 15-25% range. We do not test for flavanols, so we do not have any data to share at this time. As you may be aware, the matter of heavy metals in chocolate has been a topic for several years and Equal Exchange has worked with our partners to best navigate this in a way that allows us to sell safe products to our customers and continue to be true to supporting our farmer partners. In 2019, Equal Exchange took the step of opting into an agreement for heavy metals in chocolate products sold in California. The levels set in the agreement for cadmium and lead are more in line with the international standards Equal Exchange has been using prior to any standards in the US. As part of this agreement, we are working diligently to be in compliance with the agreement and sell products into California that are under these new limits. Beyond these new limits, the agreement has created a pool of money to invest in research to address this issue more holistically by giving us a better understanding of the avenues through which heavy metals end up in cocoa beans, and how this can be mitigated. While we believe our products have always been safe, we made this decision to more easily sell our products into California, and we see this as a positive step forward with the creation of wider resources. We hope that the industry will not only spend money to better understand the issue but also support the producers who will face the major burden of working on ways to mitigate this issue caused on the farm through the natural uptake of these minerals into cacao beans. At this time, we do not give out test results since we know that one test result is only one small snapshot in time and based on a lot of variability due to standard deviation in test results, variability in cocoa as an agricultural crop including by region and age of tree and variability in consumption patterns. As part of this California agreement that we entered, we are required to be below certain levels, or put a warning on our labels if we cannot meet these levels, which are different depending on the type of product and the % of cacao.

Is the Total Eclipse dark chocolate alkalized/Dutch processed?

Hi Deepika, None of our chocolate bars use alkalized/Dutched cocoa. If you are looking to avoid Dutched/alkalized cocoa, you'll just want to avoid our hot cocoas and baking cocoa.

Is the product non-GMO ?

Yes. GMO's are not allowed in Organic products. So any and all products listed on our site as Organic are non-GMO by default.
