Sun dried sweetness

Ethiopia is the birthplace of coffee, and this roast from the southern state of Sidamo lives up to Ethiopian coffee's well-deserved reputation for excellence. This is what’s called a “natural processed” coffee — that means the beans are sun dried with the fruit still on them, imparting a dense sweetness and complexity that comes through even after the fruit is later removed and the beans are roasted.

At our Massachusetts HQ, our team batch-roasts coffee daily under a 1,418 panel solar array, bringing out the best flavors of each harvest. At the lighter end of the roast spectrum, we accentuate the unique fruity and floral notes within the beans. As the roast length increases, the natural sugars in the coffee beans caramelize and darken to elicit a richer body. Our darkest roasts fully express the beans’ natural oils, yielding subtle smokiness and flavors akin to dark chocolate. At every level, our expert team creates a smooth, clean, and balanced cup with reliable consistency from batch to batch.

"Years ago I got the Ethiopian Yirgachefe from you, a light medium roast. As yirgachefe is a delicate variety, the lighter roast was a necessary pairing to produce the delicious coffee experience I remember. You went to 5 lb bags. My tiny freezer didn’t hold 5 lbs. I have a larger freezer now. I was dismayed to see the darker medium roast, on the description. I tried it anyway. The roast is uneven with a significant % of the beans burnt. The delicate flavor is lost. The beans after coming out of the freezer were frozen together in clumps indicating too much residual moisture. The smell on and from the bag was of garbage. Literally. I don’t know what happen to this particular run, or bag, but this is not the quality I was accustom to expect from you. I’m very sad. ☹️☹️☹️"

"Ethiopian coffee is an excellent example of why terroir matters. These beans are different. They require a lighter roast than others, giving a milder, aromatic coffee with notes of citrus and wine-like fruit. It's my favorite, although I also enjoy the darker roast of coffee from Congo. I hope Equal Exchange can also bring back coffee from Tanzania."
